Progressing from the traditional mint sauce, the addition of Bell Peppers, Tomato, and a hint of Onion, lifts the sauce into a category of its own.

Lamb Pitta ( Serves 2 ):
Ingredients:
1 tbsp Olive Oil
225g Minced Lamb
4 Pitta breads
1/2 small iceberg lettuce, shredded.
1 small red onion, thinly sliced
1 small red or green pepper, thinly sliced
3 tbsp marinade
1 small pot of natural yoghurt
Method:
1. Heat the oil in a pan and fry the mince until browned, add 2 tbsp marinade, stir through and remove from heat.
2. Add 1 tbsp of marinade to the yoghurt, stir well.
3. Warm the pitta bread and cut open.
4. Stuff the pitta with some of the lamb mixture and salad.
5. Drizzle with the mint yoghurt dressing.
