Chicken Tikka Rice ( Serves 2 ):
Ingredients:
1 tbsp Olive Oil
Skewers
1 red or green pepper
2-3 tbsp of Marinade
250g Diced Chicken
5 or 6 shalotts
Boiled rice, 100g
Method:
1. Place the diced chicken and marinade into a freezer/food bag, seal and leave to refrigerate for 30 mins.
2. Meanwhile, peel and chop the shallots in half, wash and chop the pepper into half inch peices.
3. Thread the peppers, shallots and marinated chicken onto the skewers, cook under a medium hot grill, for 7-10 minutes turning frequently.
4. Meanwhile Boil the rice until cooked.
5. Heat the oil in a large frying pan, add the rice, remove all the chicken and veg from the skewers and add to the frying pan, stir well and heat through.
